  • 1620 pieces Frozen Dumplings (veggie or meat)
  • 2 cups Bok Choy (finely chopped)
  • 1 medium Zucchini (sliced)
  • 1 tablespoon Sesame Seeds (for garnish)
  • 2 stalks Green Onions (sliced, for garnish)
  • 1/4 cup Cilantro (chopped, optional for garnish)

Instructions

  1. In a 12×8 inch baking dish, combine coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil. Whisk until smooth.
  2. Stir in grated garlic and ginger.
  3. Add chopped bok choy and sliced zucchini to the broth mixture, ensuring they are well-coated.
  4. Gently arrange frozen dumplings in a single layer over the vegetables and broth. Press them slightly into the mixture, leaving the tops exposed. Spoon extra broth over each dumpling.
  5. Preheat your oven to 400°F (200°C).
  6. Cover the baking dish tightly with aluminum foil and bake for 20 minutes.
  7. Remove the foil and bake for an additional 5-10 minutes, or until the dumplings are crisped on top and the bake is bubbly.
  8. Garnish with sesame seeds, sliced green onions, and cilantro.
  9. Serve the dumpling bake over jasmine rice or noodles.
