- 1 tablespoon Sesame Oil (optional)
- 2 cloves Garlic (freshly grated)
- 1 inch Ginger (fresh, grated)
- 16–20 pieces Frozen Dumplings (veggie or meat)
- 2 cups Bok Choy (finely chopped)
- 1 medium Zucchini (sliced)
- 1 tablespoon Sesame Seeds (for garnish)
- 2 stalks Green Onions (sliced, for garnish)
- 1/4 cup Cilantro (chopped, optional for garnish)
Instructions
- In a 12×8 inch baking dish, combine coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil. Whisk until smooth.
- Stir in grated garlic and ginger.
- Add chopped bok choy and sliced zucchini to the broth mixture, ensuring they are well-coated.
- Gently arrange frozen dumplings in a single layer over the vegetables and broth. Press them slightly into the mixture, leaving the tops exposed. Spoon extra broth over each dumpling.
- Preheat your oven to 400°F (200°C).
- Cover the baking dish tightly with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 5-10 minutes, or until the dumplings are crisped on top and the bake is bubbly.
- Garnish with sesame seeds, sliced green onions, and cilantro.
- Serve the dumpling bake over jasmine rice or noodles.

- For a zesty finish, drizzle with lime juice before serving.
- Ensure dumplings are not overcrowded for best crisping.
