Instructions

  1. In a large Dutch oven, melt the butter over medium-low heat. Add the chopped onion, carrots, and celery. Cook until soft and fragrant, about 6-8 minutes. Stir in the minced garlic for the last 30 seconds.
  2. Sprinkle the flour over the sautéed vegetables and stir until evenly coated. Cook for 1 minute to eliminate the raw flour taste.
  3. Pour in the low-sodium chicken stock and milk, then add the sweet potatoes, salt, pepper, and thyme. Bring the mixture to a boil, then reduce to a simmer. Let it cook for 15-20 minutes until the sweet potatoes are tender.
  4. Gently fold in the cooked shredded chicken, frozen peas, freshly chopped parsley, and baby spinach (if using). Allow the soup to simmer for an additional 5 minutes.
  5. Taste and adjust seasoning if needed. Serve your cozy soup hot.
