This Tomato & Lentil Soup is a comforting bowl of warmth, combining fresh tomatoes and lentils for nourishing deliciousness.


Ingredients

  • 6 cups Fresh Tomatoes
  • 1 cup Red or Brown Lentils
  • 1 large Onion
  • 3 cloves Garlic Cloves
  • 1 medium Carrot
  • 4 cups Vegetable Broth
  • 2 tablespoons Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • to taste Salt and Black Pepper
  • 1 cup Fresh Basil Leaves
  • 1/2 cup Greek Yogurt or Coconut Cream
  • 1 cup Toasted Croutons

Instructions

  1. Heat oil in a large pot over medium heat. Sauté onions, carrots, and garlic until fragrant and translucent, about 5 minutes.
  2. Sprinkle ground cumin and smoked paprika, stirring constantly for about 1 minute to bloom the spices.
  3. Add diced fresh tomatoes and cook until they soften and break down, about 8 minutes.
  4. Pour in lentils and vegetable broth, bring to a gentle boil, then reduce heat and simmer covered until lentils are tender, 20–25 minutes.
  5. Use an immersion blender to puree the soup until creamy, leaving some lentils whole for texture, about 1–2 minutes.
  6. Return to pot, season with salt and pepper, simmer for another 2 minutes.
  7. Ladle the soup into bowls, garnish as desired, and enjoy!
