- 6 cups Fresh Tomatoes
- 1 cup Red or Brown Lentils
- 1 large Onion
- 3 cloves Garlic Cloves
- 1 medium Carrot
- 4 cups Vegetable Broth
- 2 tablespoons Olive Oil
- 1 teaspoon Ground Cumin
- 1 teaspoon Smoked Paprika
- to taste Salt and Black Pepper
- 1 cup Fresh Basil Leaves
- 1/2 cup Greek Yogurt or Coconut Cream
- 1 cup Toasted Croutons
Instructions
- Heat oil in a large pot over medium heat. Sauté onions, carrots, and garlic until fragrant and translucent, about 5 minutes.
- Sprinkle ground cumin and smoked paprika, stirring constantly for about 1 minute to bloom the spices.
- Add diced fresh tomatoes and cook until they soften and break down, about 8 minutes.
- Pour in lentils and vegetable broth, bring to a gentle boil, then reduce heat and simmer covered until lentils are tender, 20–25 minutes.
- Use an immersion blender to puree the soup until creamy, leaving some lentils whole for texture, about 1–2 minutes.
- Return to pot, season with salt and pepper, simmer for another 2 minutes.
- Ladle the soup into bowls, garnish as desired, and enjoy!
