  • 1 pound Large Argentinian Shrimp, peeled and patted dry
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • 1 tablespoon Cajun Seasoning
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Red Paprika Powder
  • 1 teaspoon Dried Oregano
  • 2 tablespoons Unsalted Butter
  • 1 Jalapeño, diced
  • 1 cup Red Bell Pepper, chopped
  • 1 medium Yellow Onion, chopped
  • 1 cup Tomato Sauce
  • 1 cup Heavy Cream
  • 12 ounces Rigatoni Pasta
  • 1/4 cup Fresh Parsley, chopped
  • 1/2 cup Parmesan Cheese, grated (optional)

Instructions

  1. Marinate the shrimp in lemon juice, olive oil, Cajun seasoning, garlic powder, red paprika, and oregano for 10 minutes.
  2. Sauté the marinated shrimp in a large skillet over medium-high heat for 1-2 minutes per side until pink. Remove and set aside.
  3. Melt butter in the same skillet. Add jalapeño, red bell pepper, and yellow onion, cooking for 7-10 minutes until softened.
  4. Stir in tomato sauce and cook for 2-3 minutes. Add heavy cream and remaining spices, mixing well.
  5. Return the shrimp to the skillet and simmer for 3-4 minutes.
  6. Cook rigatoni in salted boiling water until al dente (8-10 minutes). Reserve 1 cup of pasta water before draining.
  7. Combine pasta with the sauce and shrimp. Add reserved pasta water as needed for desired consistency.
  8. Serve hot, garnished with parsley and Parmesan cheese.
