- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh chives, chopped

- 2 tablespoons lemon juice
- 1/2 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil

Instructions
- Prepare the Cowboy Butter Sauce: In a medium bowl, combine softened butter, minced garlic, chopped parsley, chives, and thyme leaves. Add lemon juice, red pepper flakes, salt, and pepper. Mix until well combined and set aside at room temperature.
- Prepare the Chicken: Pat chicken breasts dry and season both sides with salt and pepper. If thick, pound to an even 1-inch thickness. Let chicken rest at room temperature for 10 minutes.
- Cook the Chicken: Heat olive oil in a large cast iron skillet or heavy-bottomed pan over medium-high heat. Add chicken and cook for 6-7 minutes on the first side. Flip and cook for another 5-6 minutes, until internal temperature reaches 165°F.
- Rest and Serve: Remove chicken from heat and immediately top with generous amounts of cowboy butter sauce. Let the chicken rest for 5 minutes. Slice and serve with extra cowboy butter sauce on the side.

- For best results, use room temperature butter for the sauce.
- Ensure chicken reaches an internal temperature of 165°F using a meat thermometer.
