- 1 cup brewed coffee, cooled
- 1/4 cup Amaretto liqueur
- 24 ladyfingers
- 1 cup granulated sugar
- 4 large egg yolks
- 1 pound mascarpone cheese
- 1 cup pitted fresh cherries, halved
- 2 tablespoons unsweetened cocoa powder
Instructions
- In a shallow bowl, combine the cooled coffee and Amaretto. Quickly dip the ladyfingers into the coffee mixture, coating both sides.
- In a medium bowl, beat the egg yolks and sugar together until light and creamy.
- In a separate bowl, fold the mascarpone into the egg yolk mixture until fully incorporated.
- In a 9×13 inch baking dish, arrange a layer of the coffee-soaked ladyfingers. Spread half of the mascarpone mixture over the ladyfingers, then top with half of the cherries.
- Repeat the layers, ending with the mascarpone mixture. Dust the top evenly with the cocoa powder.
- Refrigerate for at least 6 hours, or up to 24 hours, before serving.
