Ingredients

  • 4 cups all-purpose flour (plus extra for dusting)
  • 1.5 tsp baking soda
  • 1 tsp salt
  • 2 tbsp chopped fresh chives
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh sage
  • 1 cup shredded cheddar cheese
  • 1.75 cups buttermilk

Instructions

  1. Preheat your oven to 425°F.
  2. Combine the flour, baking soda, and salt in a mixing bowl.
  3. Incorporate the chopped herbs and cheddar into the flour mixture.
  4. Add the buttermilk and stir until just combined.
  5. Turn out the dough onto a lightly floured counter and fold it to form a smooth ball.
  6. Shape the dough into a ball and pat it into a 7-inch circle.
  7. Transfer to a floured baking sheet and dust with flour.
  8. Score a cross into the top of the dough about ½ inch deep.
  9. Bake for 15 minutes, then reduce the temperature to 375°F and continue baking for another 30 to 35 minutes.
  10. Cool by wrapping in a tea towel.
