Description

Billy Miner Ice Cream Pie is a delightful dessert combining coffee ice cream, fudge, and Oreo crust.


Ingredients

  • 1/2 cup Butter (divided; melted)
  • 36 Oreo cookies (crushed)
  • 3 ounces Unsweetened dark chocolate
  • 2/3 cup Granulated sugar
  • 2/3 cup Evaporated milk
  • 1 teaspoon Vanilla extract
  • 1 1/2 quarts Coffee ice cream (slightly softened)
  • 1 cup Heavy whipping cream
  • 3 tablespoons Confectioners’ sugar
  • 1 cup Sliced almonds

Instructions

  1. Melt Butter: Start by melting 1/4 cup of butter in the microwave or on the stove in a small stock pot.
  2. Combine Cookies: In a mixing bowl, stir together the crushed Oreo cookies and the melted butter until the crumbs are well coated.
  3. Shape the Crust: Press half of the cookie mixture firmly into the bottom of a 10-inch pie plate. Chill in the fridge for about 15 minutes to set.
  4. Melt Chocolate: In a small saucepan over low heat, melt the remaining butter with the unsweetened dark chocolate. Stir frequently until completely melted.
  5. Mix Fudge: Once melted, remove from heat and add 2/3 cup of granulated sugar, stirring well. Gradually pour in 2/3 cup of evaporated milk while mixing. Add in 1 teaspoon of vanilla extract and set aside to cool.
  6. Layer Ice Cream: Spread 1 1/2 quarts of slightly softened coffee ice cream over the crust. Smooth the top and sprinkle reserved crushed Oreos, then return to the freezer.
  7. Add Fudge Layer: After the ice cream has firmed (about 30 minutes), spread the cooled fudge layer over the ice cream. Return to the freezer for an additional 30 minutes.
  8. Whip Cream: In a mixer, whip 1 cup of heavy whipping cream with 3 tablespoons of confectioners’ sugar until soft peaks form.
  9. Top with Whipped Cream: Once set, remove the pie from the freezer and top with the whipped cream. Smooth it out beautifully and store in the freezer.
  10. Garnish and Serve: Finish with a sprinkle of sliced almonds when serving. Enjoy every delightful bite!
