Instructions
- Preheat your oven to 350°F (175°C). Position the rack in the center.
- Generously grease or line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together rolled oats, flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mash ripe bananas until smooth. Whisk in eggs, yogurt, honey (or maple syrup), and vanilla extract.
- Pour wet ingredients into dry ingredients. Gently fold with a spatula until just combined; a few lumps are okay.
- Use a ¼-cup scoop to fill each muffin cup about ¾ full. Add optional nuts or chocolate chips on top if desired.
- Bake at 350°F for 18–20 minutes until golden and a toothpick inserted in the center comes out clean.
- Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool slightly before serving.
