- 1 lb Turkey breast tenderloins
- 2 tablespoons Olive oil
- 2 teaspoons Fresh cracked pepper (divided)
- 2 teaspoons Celtic sea salt (divided)
- 1 Yellow onion (diced)
- 2 medium Sweet potatoes (diced into 1″ cubes)
- 4 oz Butter (melted)
- 1/4 cup Minced garlic
- 1 tablespoon Italian herbs seasoning blend
Instructions
- Preheat your oven to 350°F.
- Season the turkey breast tenderloins with 1 teaspoon of sea salt and cracked pepper.
- Heat a large, heavy pan over medium-high heat and add the olive oil.
- Sear the turkey in the hot pan for about 2-3 minutes on each side until it’s brown all over.
- Combine the sweet potatoes and diced onion on a baking sheet.
- Arrange the seared turkey in the center of the sweet potatoes and onions on the baking sheet.
- Mix melted butter, minced garlic, and Italian herbs in a small bowl with the remaining salt and pepper. Pour this over the turkey and veggies.
- Roast everything in the preheated oven for 35-40 minutes, until the internal temperature of the turkey reaches 165°F.
- Rest the turkey for at least 10 minutes after taking it from the oven.
- Garnish with fresh herbs.
