- 4 large Honeycrisp apples
- 4 oz crumbled feta cheese
- 1/4 cup honey
- 1/2 cup fresh cranberries
- 2 tbsp chopped fresh rosemary
- 1/4 tsp ground cinnamon
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the apples and use a melon baller or small spoon to scoop out the cores, leaving a 1/2-inch thick shell.
- In a small bowl, mix together the feta, honey, cranberries, rosemary, and cinnamon.
- Spoon the feta-cranberry mixture evenly into the hollowed-out apples.
- Place the stuffed apples in a baking dish and bake for 30-35 minutes, until the apples are tender and the filling is bubbly.
- Serve warm, with a drizzle of extra honey if desired.
