- 0.5 cup Sugar
- 1 large Egg Yolk
- 1 teaspoon Vanilla Extract
- 1.25 cups Almond Flour
- 3 cups All-Purpose Flour
- 0.75 cup Brown Sugar
- 0.5 teaspoon Baking Soda
- 0.5 teaspoon Salt
- 1 cup Sliced Almonds
- Powdered Sugar (optional for dusting)
Instructions
- Cream 3 tablespoons of softened butter with ½ cup of sugar until light and fluffy.
- Add in one egg yolk, 1 teaspoon of almond extract, and 1 teaspoon of vanilla extract. Stir until well combined, then gently fold in 1¼ cups of almond flour.
- In a separate bowl, cream together 1 cup of softened butter, 1 cup of sugar, and ¾ cup of brown sugar until creamy. Add in two eggs and beat them into the mix.
- Gradually mix in 3 cups of all-purpose flour, ½ teaspoon of baking soda, and ½ teaspoon of salt until just combined.
- Gently fold the almond mixture into the cookie dough until fully incorporated and chill the dough for 30 minutes.
- Preheat your oven to 350°F (175°C). Scoop tablespoonfuls of dough, roll them in sliced almonds, and place on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until the edges are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack and dust with powdered sugar if desired.
