Ingredients

  • 0.5 cup Sugar
  • 1 large Egg Yolk
  • 1 teaspoon Vanilla Extract
  • 1.25 cups Almond Flour
  • 3 cups All-Purpose Flour
  • 0.75 cup Brown Sugar
  • 0.5 teaspoon Baking Soda
  • 0.5 teaspoon Salt
  • 1 cup Sliced Almonds
  • Powdered Sugar (optional for dusting)

Instructions

  1. Cream 3 tablespoons of softened butter with ½ cup of sugar until light and fluffy.
  2. Add in one egg yolk, 1 teaspoon of almond extract, and 1 teaspoon of vanilla extract. Stir until well combined, then gently fold in 1¼ cups of almond flour.
  3. In a separate bowl, cream together 1 cup of softened butter, 1 cup of sugar, and ¾ cup of brown sugar until creamy. Add in two eggs and beat them into the mix.
  4. Gradually mix in 3 cups of all-purpose flour, ½ teaspoon of baking soda, and ½ teaspoon of salt until just combined.
  5. Gently fold the almond mixture into the cookie dough until fully incorporated and chill the dough for 30 minutes.
  6. Preheat your oven to 350°F (175°C). Scoop tablespoonfuls of dough, roll them in sliced almonds, and place on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes until the edges are golden brown.
  8. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack and dust with powdered sugar if desired.
